I had planned to say a lot today, things about summer and childhood memories. Things like Coconut Blackberry Popsicles don't require much sugar or sweetners because usually and especially when you've been running around enjoying summer days you're not paying too much attention to long prep times for anything.
Let's pause for a moment instead, with sad news to share. This morning, after having sat down at my desk for a new week, I got a little skype message from my mother saying "our little ones asleep." Our little one being our cat. I am not a cat person, but I was a Pansy person.
We had a special bond that we had shared between my flits offshore and her love for me was obviously larger than for anyone else. Leaving home, family and friends usually also includes leaving behind precious pets.
In the cold early April morning when I took my bags and hugged my mother goodbye this year I knew I would likely never see Pansy again, but among the rush to get to the airport on time, Pansy disappeared and I never got to say my goodbye.
I'm really not a cat person, but she was an old friend whose love would comfort in a good or bad mood. Whose love wasn't dependent on expectations, simply she just loved. Like animals do. A friend shared the message a wise child once stated: "we never really own them, but rather borrow for a while."
I'm sad we couldn't borrow her longer. Most of all I'm sad I never gave her the goodbye she deserved. So nestled in the summer heat and coconut blackberry popsicles is a little friend gone to sleep.
These popsicles couldn't be easier to make and contain no added sugars. That's right, the blackberries are doing all the heavy lifting here. Though, coconut milk is a little sweet to begin with, this is a creamy, sweet and tart treat for those hot days. Within those popsicles hides more blackberries then you see, which is a little bit of a surprise.
How to prepare Coconut Blackberry Popsicles
- Halved berries: Halve your blackberries and toss evenly into your popsicle molds.
- Mold half full: Pour the coconut milk half way up the molds.
- Freeze for 1 hour: Push the popsicle sticks into the center of the molds and freeze for 1 hour.
- Toss: Toss the remaining blackberries into the molds and fill with the remaining coconut milk.
- Freeze: Freeze for minimum 3 hours or until set.
- Serve: Remove from the freezer and allow to stand at room temperature until it wiggles free. Bite in and enjoy!

Serves 4
Ingredients:
110 grams / 1 cup blackberries
1 tablespoon maple syrup
500 milliliters / 2 cups coconut milk
Directions:
Slice the blackberries in half and place pour over maple syrup.
Place under the grill until a little softened and fragrant, approximately 3 minutes.
Pour the coconut milk half way up the molds.
Spoon the blackberries equally among your moulds and cover with coconut milk.
Freeze for 1 hour.
Remove from the freezer and press the popsicle sticks into the center of each mould.
Return to the freezer for 3 hours or until frozen.
Remove from the freezer and allow to sit at room temperature until you can wiggle the popsicles free.
Serve.
