The tick of the clock has gone faster then I imagined. Is not that always the way? You say I have time for this and this and this. Then all you seem to get lucky to find time for is this.
It is a habit of mine to always over commit myself to be able to do something and then somehow it doesn’t ever all get done, no matter how much the intention is to do this. Just as time passed my friend and I by as we held a New Girl marathon and the laughter stretched into a new day. Time has gotten away from me in another way.
In January I made dinner for some friends and the very next blog post I stated I would share some of the recipes in the coming weeks. I like to share food, however, it is now a little over four months since I said those words about sharing the recipe in today’s post.
This is what I prepared for them that summer evening in their small kitchen while their children ran around enjoying the last of the summer evening light and warmth. This is what my friends enjoyed as I cooked their satisfying dinner. I’m sorry it’s taken me so long, but if you have some prawns lying around then this is a quick and satisfying appetizer to get your dinner started.
Spiced Prawns with Avocado Dip
1 cups prawns, shelled
2 tablespoons garam masala
1 avocado, pureed
2 tablespoons mayonnaise
1 teaspoon mustard seeds
1/2 tablespoon lemon juice
Place the prawns and garam masala in a bowl and toss to coat, slide onto skewers.
Cover and refrigerate while you prepare the dip.
Place the avocado, mayonnaise, mustard seeds and lemon juice in a bowl and blend until smooth. Pour into a serving bowl.
Heat a little olive oil and salt in a saucepan over medium heat and add the prawns.
Cook until brown and continue with the remaining prawns until all are cooked.
Place the prawns in a serving dish and accompany with the avocado sauce.
Serve immediately with a squeeze of lemon juice.
