Picnic In the Park – Savory Twists

Picnics are all about snacking over hours.

They are so informal and that is the beauty of them.

No roast bird is needed for the occasion with lots of traditional sides. No slaving over a hot oven for guests.

A picnic involves lots of time chatting and eating and then possibly some sport playing before more chatting and eating.

It goes in this relaxed, no schedule format.

No picnic would be complete without snacks, whether bought pre-packaged or homemade.

These little snacks can be adapted to the crowd your feeding, whether vegetarian all the way or meat lovers.

The fillings are really up to your own imagination, here is simply my base.

Savory Twists

Serves 10

Twists Dough
1 packet instant yeast
3/4 cup milk, warm
100 grams butter, melted
1 large egg
4 cups flour
Fillings
1/2 cup sundried tomatoes
2 handfuls fresh basil, shredded
1/2 cup goats cheese, cubed
6 rashers bacon, cooked
1 1/2 cups chedder cheese, grated
1/2 cup tomato paste

Directions:
Place the warm milk and yeast in a bowl and allow to stand for 10 minutes.

Add in the butter, egg and flour and stir to combine.

Spread a light amount of flour on your bench and knead into a smooth dough, approximately 3 minutes.

Return to the bowl and place in a warming cupboard until doubled in size, approximately 2 hours.

Remove and knead once more. Halve and set one half aside.

With the second half, roll out to 1/4 inch thickness and an even oblong shape.

Sprinkle over the basil, sundried tomato and goats cheese. Tightly roll and slice down the middle. Join one end and ensuring the open edge stays on top, slowly and carefully twist the dough, joining the ends together once complete.

Allow to sit for a minimum 30 minutes. Slice into 6 inch pieces and lay onto a tray prepared with greaseproof paper.

Preheat the oven to 190°C/350F and bake for 12 minutes or until golden brown.

Remove and allow to cool.

Repeat with the remaining half, rolling out, spreading a thin layer of tomato paste over and sprinkling with shredded cooked bacon and finish with the cheese.

Once baked, slice in half so you should have approximately 8 twists of each flavor.

Serve.
