Smoked Salmon Cream Cheese Sandwich

While in Austin with my friend James, our days entailed very late nights of watching Matt Damon movies and hanging out with his friends. They were so late that it would be early morning by the time we fell into the world of sleep. Then we would awaken mid morning and our day would begin, throwing my breakfast routine of eating pre-11am out the window. One morning after another late night of watching movies, we opted to go straight downtown instead of eating granola and soon we were walking into Easy Tiger where we sat in the garden and devoured our midday breaking fast.

When I departed Austin a few days later, that sandwich came under the umbrella of wonderful memories I took from my visit in Austin. It’s a place I look forward to returning to with the culture of the people so chill and embracing of a more natural life, a hippy beach town sitting hours from the ocean. It’s the kind of place that will make you feel comfy real quick.

Maybe its because of how starving I was or how incredible that sandwich and side salad was, but I knew half way through consuming my meal that I would have to make this for all of us unlucky people who don’t live in Austin, so here it is. A simple smoked salmon sandwich, but the real winner of this recipe is the side salad that will surely become one of my regular salads because it’s so incredibly tasty.

Smoked Salmon Cream Cheese Sandwich
Adapted from Easy Tiger
Serves 2

Ingredients:
Side salad
1/3 medium cucumber, chopped into large cubes
1 cup cherry tomatoes, quartered
1/4 red onion, sliced into half moons
1 tablespoon fresh dill, roughly chopped
3 tablespoons vinegar
2 tablespoons maple syrup
Smoked Salmon Sandwich
1/3 pound/150g smoked salmon
1 tablespoon capers, roughly chopped
1 tablespoon fresh dill, roughly chopped
4 tablespoons cream cheese
4 slices grain bread (the best rustic loaf you can find)
1/4 cucumber, sliced

Directions:
Place the cucumber, tomato, onion and dill in a bowl and stir to combine. Mix the vinegar and maple syrup together and pour over. Set the salad aside.

Meanwhile, place the smoked salmon, capers, dill and cream cheese in a bowl and combine with a fork until well mixed.

Lay two of the sliced bread down and top with the cucumber slices, than the smoked salmon mixture.

Top with the remaining bread slices and halve.

Serve with the side salad.
