Walking through the crowds coming and going to the various stages for the last acts on Sunday, it was clear that festivals are something that should be sought out as often as one can go.
How to make Salted Caramel Yogurt Popsicles
- Get those walnuts golden: Lightly toast the walnuts until golden.
- Stir the maple through: Add the maple syrup and stir through until coated.
- Salty: Sprinkle the salt over and stir to get the walnuts sweet and salty.
- Creamy yogurt: Stir the yogurt and cream together until smooth.
- Cara-mel: Add the caramel to the creamy mixture and stir until swirled.
- Spoon: Spoon a portion into your popsicle molds and sprinkle over some sweet and salty walnuts.
- Layer: Add the remaining creamy mixture and walnuts until even.
- Tap tap: Tap the popsicle molds to remove any air bubbles from between the layers.
- Freeze: Freeze for at least 4 hours.
- Serve: Remove and allow to sit at room temperature until they slide out. Enjoy!

Walnut sub: If you prefer the flavor of pecans, they would work beautifully in these popsicles.
Yogurt sub: Creme fraiche or sour cream would work well as subs for the yogurt here. You do want something that isn't too sweet to balance out the caramel and maple walnuts.

How to make Salted Caramel Yogurt Popsicles:
Place the walnuts in a small saucepan on low heat, stirring until golden for approximately 5 minutes.
Remove from the heat and pour the maple syrup over the walnuts, stirring to coat.
Drizzle over the salt and stir to evenly combine. Set aside.
Meanwhile, place the yogurt and cream in a bowl and stir to combine until smooth.
Add the dulce de leche and stir to evenly swirl through the yogurt mixture.
Spoon a heaped spoonful of the creamy caramel into your popsicle molds and sprinkle over some of the maple walnuts.
Repeat layering until complete and tap your molds to ensure there are no air bubbles.
Push your popsicle sticks into the center of each and place in the freezer for a minimum 4 hours.
