Description
Cheddar scones are a hit with kids and adults alike and are best served warm with a thick smear of butter...they'll disappear quickly!
Ingredients
360 grams / 2 1/4 cups plain flour
2 tablespoons corn flour
5 teaspoons baking powder
1/2 teaspoon salt
175 milliliters / 3/4 cup milk
100 milliliters sparkling water
1 1/2 cups grated cheddar cheese + 1/2 cup for toppings
Instructions
- Preheat the oven to 200°C/400F and greaseproof a baking tray.
- Place the flour, corn flour, baking powder and salt in a bowl and stir to combine.
- Make a well in the center and pour in the milk, sparking water and add the cheese.
- Fold together until just combined and a dough has formed.
- Turn onto a well floured surface and sprinkle flour over the top.
- Press down into an even mixture then cut into your desired shape.
- Place on the baking tray and drizzle a small handful of the extra cheese on top.
- Bake for approximately 18 minutes or until the edges are golden brown.
- Remove from the oven and place on a cooling tray.
- Serve warm with a little butter.
Notes
Smoked cheese: If you have some smoked cheese on hand, switching out a 1/2 cup with smoked cheese will add to the depth of flavor in the scones.
Serving: Like most scones, these are best served the day they are made.
