Description

The smooth flavor of Eggnog should not just be saved for the holiday season, in fact, because this is best served chilled, it's a great drink for the hotter season. The best past of this is that it comes together fast enough to prepare ahead of time.


Ingredients

500 milliliters / 2 cups whole milk
4 cloves
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
6 egg yolks, room temperature
100 grams / 1/2 cup superfine/caster sugar
125 milliliters / 1/2 cup brandy
500 milliliters / 2 cups cream
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg


Instructions

  1. Place the milk, cloves, vanilla extract and cinnamon in a saucepan over low heat until the milk begins to simmer.
  2. Meanwhile, whisk the egg yolks and sugar in a heatproof bowl until pale and fluffy.
  3. Adding a further ladleful at a time and stirring, until all the milk has been combined.
  4. Pour enough boiled water into your saucepan for the heatproof bowl to sit within, without touching the water.
  5. Place the saucepan on medium heat and set the heatproof bowl with the milk and egg mixture within.
  6. Stir constantly until the mixture is thick enough to cover the back of a spoon (approximately 10 minutes).
  7. Remove from the heat and set aside to cool fully for an hour.
  8. Discard the cloves and pour in the brandy, cream, vanilla extract and nutmeg stirring until well mixed.
  9. This is best served chilled after allowing the flavors to infuse overnight.
  10. Serve.
