Green Beans and Tomatoes

If you are having a bad day what do you do when you finally get home and have a chance to decompress?

If you happen to be an animal lover like myself then maybe you find yourself looking at animal videos on YouTube or on the wonderful animals page of Buzzfeed. Casually during a usual Monday (which means my eyes were blurry and my brain still reseting to work mode) I stumbled on a sweet article about a toddler Beau and his nap buddy puppy Theo (#theoandbeau on Instagram to see the instant results from the wonderful mama and blogger).

Scrolling past image after image of these two napping pals in absolute, bliss inducing cuteness melts any bad things or stresses. So if you happen to be someone preparing for Thanksgiving and scrambling around the kitchen then have someone bring these pictures to you to help a little of the anxiety dissipate in the seconds you allow your eyes to glance away from basting, slicing and sauteing.

Or if things aren’t going so well, remember the internet helps to make things better – just go watch some goats do their thing or listen to a baby laugh and you’ll feel like Katy Perry when she’s singing Roar in no time!

And be sure to set aside a little of these beans to add to your turkey hangover day sandwiches – they work a treat in a sandwich.

Green Beans and Tomatoes
Adapted from
Serves 8

2 tablespoons olive oil
5 cloves garlic, roughly chopped
2 whole tomatoes, fresh or canned, peeled and crushed
1 pound green beans, trimmed
1/4 cup water
Salt and freshly ground black pepper, to taste

Place the oil on medium in a skillet and add in the garlic, stirring to cook evenly.

Add in the tomatoes and stirring constantly to cook evenly until soft.

Add in the green beans and the water. Cover, stirring occasionally for approximately 8 minutes or until the beans are soft.

Remove and season with the salt and pepper.
