Oven-Baked Sausages with Balsamic Tomatoes

The long weekend was sufficiently relaxing and catching up on to-do tasks like emailing friends who have been waiting for replies for some time or staying up to 2am after a 3-hour Facetime with a close friend.

In true form we proved that age doesn’t necessarily reflect being adults, especially after agreeing we would both have onesies to wear next time we catch up.

But also, it was a perfect time to get away from the hustle and bustle of London for a quieter locale.

After losing my job our original plans for Easter had to be postponed so my friend Keeley and I decided to go to Dover. A very quiet through-way town where people come and go between England and Europe.

We went to just relax near a beach and go for a little hiking.

One night away with the sunshine bright in the sky made for wandering in the woods not too bad. Although our original intention was to walk the White Cliff’s it proved more difficult with the advice given by a local.

After a lovely sunshiney day and pastel sunset we awoke to a rainy soaked sky so enjoyed a drink, some cake and then headed back to London.

With such perfect spring weather present it seemed like a perfect time to enjoy tomato season beginning with some oven baked sausages and this dish does not disappoint to capture the changeable season perfectly!

Oven-Baked Sausages and Balsamic Tomatoes
Adapted from Mindfood
Serves 4

Ingredients:
12 sausages, pre-cooked (approximately 800 grams/1.8 pounds)
6 garlic cloves, sliced
1 red onion, cut into wedges
450 grams/1 pound cherry tomatoes, halved
3 tablespoons balsamic vinegar
1/2 cup fresh basil, torn

Directions:
Preheat the oven to 180°C/350F and place the sausages, garlic and onions in a large baking dish with a little oil and cook until golden, approximately 15 minutes.

Remove from the oven and add in the tomatoes, balsamic vinegar and seasoning to taste.

IMG_5154Bake for a further 15 minutes.

Remove and sprinkle over the fresh basil and a dash of balsamic vinegar.

Serve immediately.

Note: The original recipe called for regular sausages (sausages that haven’t been pre-cooked), however, the dish ended up taking over an hour to cook, so if you have regular sausages, just place them in a frying pan and cook evenly on all sides for approximately 10 minutes then proceed with the above recipe.
