Description
Belgian Mashed Potato recipe is creamy mashed potatoes flecked with soft leeks make for an upgraded take on this classic.
Ingredients
2 1/2 large / 1 pound potatoes, peeled and cubed
28 grams / 2 tablespoons butter
1 small onion, finely chopped
1 garlic clove, finely chopped
2 leeks, finely sliced (don’t use the dark green top)
60 milliliters / 1/4 cup vegetable stock
60 milliliters / 1/4 cup pouring cream
Salt and pepper to taste
Instructions
- Place the potatoes in a pot with water and cook on medium heat until soft (a knife should go through it easily, but they shouldn’t be crumbling apart). Mash or puree with a hand blender and set aside.
- Place the butter, onion and garlic in a frying pan on medium heat and cook for 1 minute. Add the sliced leeks and cook until translucent.
- Add the stock and cream, stirring to cover and simmer for 10 minutes.
- Drain the liquid off into a container and remove the leek mixture from the pan. Return the liquid to the heat and allow to simmer, reduce and thicken for a further 10 minutes.
- Add the leeks and potatoes to the mixture and stir through to combine.
- Serve immediately.
Notes
Serving suggestion: You could absolutely add a twist to this by stirring through caramelized onions or topping this with crunchy onions.
