I’ve been trying to find a job for a few weeks now, long enough that the creeping self doubt which grows over time of a job search has kept me indoors searching with crossed fingers that something, anything will come up and I don’t have to go begging to my dad for help.
This has also meant eating rice and beans which I won’t complain about, although my body is hungering for some smoked salmon from this recipe or chicken or slices of perfectly crispy bacon. Meat, though, is not a pauper’s choice. These things have all been added to the list of things to do when money and I are better friends. Oh those lists of what to get are always made when jobless and rarely do they ever get completed, it’s fun to daydream though.
So while editing my resume and making sure my cover letter has no spelling mistakes in it, I’ve hovered indoors watching reruns of Ugly Betty or Hello, I Must be Going (a great pick me up movie when you’re feeling down) on Netflix. Finding ways to get out of my pajamas only when I know roommates will be returning soon and I don’t want to appear like this. I’ve also seen Bridesmaids enough over the past few weeks that I’m beginning to think “help me I’m poor” is an option.
Yes life ‘in between jobs’ leaves one hopelessly unfulfilled, but it also means for a short time you’re given something that has disappeared from regularity and that is time. This has allowed me to actually catch up on sleep for the first time in forever. Digging up my paintbrushes and watercolor paints, I’ve also tried my hand at painting, a hobby I have always had, but ran short of time on the past few years.
It’s also meant I’ve been able to enjoy the sunny days because the sun now sets around 4pm, much earlier than I could enjoy working in an office. And go buy one of London’s best donuts on a Friday when there are less crowds hovering for a taste of these filled delights. Being jobless isn’t all bad, but I can’t wait to get back to seeing people over meals with some meat or smoked salmon in them.
Like these latkes with smoked salmon, a dish so easy I didn’t even have to take photos of putting it together. Once the latkes are cooking the dish can be whipped up in five easy minutes, making this a great option for brunch or an easy weekend lunch.
Sweet Potato Latkes with Smoked Salmon
2 large sweet potatoes, peeled and grated
1 tablespoon fresh chili, finely chopped
2 avocado, peeled and sliced
100g smoked salmon slices
1/4 cup lemon juice
1/4 cup sour cream
Parsley to serve
Squeeze the sweet potatoes of it’s juice and shape into a patty (I pressed them into a small bowl and upturned directly into the frying pan). Cook on medium heat with a little oil for 3 minutes either side.
Continue with the remaining potatoes until all the latkes have been made.
Serve the latkes with some smoked salmon slices folded on top. Place half an avocado on the side, sprinkle the chili over the top with a tablespoon lemon juice.
Spoon a dollop of sour cream on the side.
Finish with the parsley and serve immediately.
