Classic New Orleans dessert Banana's Foster comes together in less than 10 minutes and includes rum so is perfect to follow an adult dinner, particularly in the middle of winter.
Place the sugar, butter and ground cinnamon in a heavy frying pan or skillet on medium-low heat, stirring until the sugar is dissolved.
Lay the sliced bananas in the pan, stirring the bananas as they soften and ensuring they are cooked evenly, approximately 3 minutes.
When the bananas are soft, carefully add in the rum and tip the pan slightly, lighting flames with a lighter.
Carefully set the pan down and continue cooking until the flame subsides.
Remove from the heat, top with the ice cream into serving dishes and finish with a drizzle of the rum and sauce.
Serve warm.
Notes
Bananas: The best bananas are ones that are medium to large and have turned ripe and have at least a few marks or are on the browner side will be sweeter and softer texture to give this dessert it's beloved flavor.
Rum: Dark rum is the traditional ingredient used in this recipe and it's best added when the temperature is low so it can provide the complimentary flavor to the bananas and the needed fuel for the fire that completes the caramelization here.
Cooking the rum: We want the heat to be as low as possible so the rum loses as little alcohol content as possible because this is what helps the flame catch on the whole dish.
Time to cook: The entire dish of Bananas Foster comes together really quickly so you want to have all your ingredients prepped and ready.
