Brændende Kærlighed also known as Burning Love is a dish of creamy mashed potatoes topped with bacon and onion is a perfect Danish dish for all year around, but is best in winter.
1kilo/ 2.2 pounds mashing potatoespeeled and cubed
170grams/ 8 bacon rasherssliced into ½ inch pieces
1large onionpeeled and sliced into thin half moons
60grams/ 4 ⅓ tablespoons butter
155milliliters/ ? cup pouring cream
To serve
Handful chivesfinely sliced
Salt and pepper to season
Instructions
Place the potatoes into a pot with fill halfway with water, cook on medium high heat until soft when pierced with a knife.
Meanwhile, toss the bacon into a frying pan on medium low heat until lightly cooked, approximately 2 minutes.
Toss the onions in and stir through, cooking until the bacon begins to brown.
Add in 10 grams of the butter and stir through, cooking until crispy and stirring so they don't stick to the base of the pan.
Drain the potatoes and add the butter and cream to the pot.
Mash until smooth.
Spoon the potatoes onto your serving plate and top with the crispy bacon
Season with salt and pepper and finish with the chives.

Notes
Potatoes: Any mashing potato such as a Russet or Yukon Gold will be best here.
Bacon: Back bacon was used as it has the most 'meat' and least fat, but you do you, use whatever bacon you want.
Add other ingredients: Some people like to add grated cheese on top before serving, while others may choose to incorporate herbs like parsley or chives for added flavor.
