Homemade Apple Cider

Apple cider feels like one of those truly quintessential drinks, however, apples are in abundance in so many lands in the fall and this is one way to utilise them to warm you up during those cooler months!

Ingredients

  • 10 medium apples quartered
  • 125 grams / ⅔ cup superfine/caster sugar
  • 1 tablespoon ground cinnamon
  • tablespoon ground allspice

Instructions

  • Place the apples (skin and seeds included) and water in a pot and add enough water to cover, approximately 2-3 liters or ½-2/3's a gallon.
  • Add the sugar, ground cinnamon and allspice.
  • Heat on medium and boil uncovered for 1 hour.
  • Lower to medium heat and simmer covered for a further 2 hours.
  • Remove from the heat and strain, allowing the liquid to drip free for a minimum 15 minutes, stirring to ensure all the liquid has drained off.
  • Pour into a container or bottle and refrigerate.
  • To serve, heat low to medium heat for approximately 3 minutes or until lightly simmering.
  • Serve warm with a cinnamon stick.

Notes

  • Customize the cider: Add additional spices such as nutmeg or star anise for extra warmth and flavor. You can also adjust the sweetness to your preference by adding more or less sugar.
  • Keep refrigerated: For up to one week. Make sure to store it in airtight containers to maintain its freshness.
