Ingredients
100 grams / 2/3 cup fresh cherries, pitted and sliced into eighths
50 grams / 1/4 cup superfine/caster sugar
155 milliliters / 2/3 cup heavy cream
81 grams / 1/3 cup Greek yogurt
Instructions
- Place the cherries and half the sugar into a small saucepan on low heat and cover with a lid.
- Cook until the juices have dissipated, approximately 5 minutes.
- Remove from the heat and set aside to cool completely.
- Meanwhile, place the heavy cream and remaining sugar into a bowl and beat until soft peaks are just reached.
- Add the Greek yogurt to the whipped cream and fold to combine.
- Spoon or pipe enough of the creamy mixture to cover the base of your popsicle molds. Tap to remove any air bubbles.
- Top with a teaspoon of softened cherries and repeat the layering until your molds are full and you have tapped the molds to remove any air bubbles.
- Press your popsicle sticks into the center of your molds carefully.
- Place into your freezer for a minimum of 4 hours.
- Remove and allow to sit at room temperature for 10 minutes or until the popsicles slide out of the molds easily.
- Serve up and dig in immediately!
