    Fresh sweet seasonal cherries and cream popsicles make for an easy way to use up a surplus of this incredible stone fruit. What are your thoughts on creamy popsicles?

    Sweet soft cherries

    Thanks to cooking the cherries on the stovetop, we cook down the cherries to increase their sweetness and intensify their flavor.

    Tart and creamy

    The thick and tart Greek yogurt swirled with the lightly whipped cream compliments the cherries and turns these from a dessert to an anytime of day treat.

    Ingredients and substitutions for Cherries and Cream Popsicles

    • Cherries: Fresh cherries were used here thanks to them being in season, however, frozen cherries would work in the same way. Alternatively cherry jam would also work to make things quicker and or easier.
    • Sugar: Superfine or caster sugar help not only sweeten the overall dish, but also help to draw the moisture from the cherries to reduce the juices and provide a nice thick mixture to go into our popsicles.
    • Greek yogurt: Tart and thick yogurt balance the sweetness of the cherries
    • Heavy cream: Freshly whipping heavy cream makes the creaminess in our popsicles perfect and combines beautifully with the yogurt.

    Equipment needed to make this

    Saucepan: A small saucepan is needed to simmer those cherries.

    Mixing bowl: To whip that heavy cream and stir the yogurt together.

    Popsicle tray: A rectangular popsicle tray works best here.

    Popsicle sticks: Regular wooden popsicle sticks.

    Salted Caramel Yogurt Popsicles

    Cherries and Cream Popsicles
    Recipe by Roamingtaste
    Makes 6 popsicles

    Ingredients:
    100 grams / ⅔ cup fresh cherries, pitted and sliced into eighths
    50 grams / ¼ cup superfine/caster sugar
    155 milliliters / ⅔ cup heavy cream
    81 grams / ⅓ cup Greek yogurt

    Directions:
    Place the cherries and half the sugar into a small saucepan on low heat and cover with a lid.

    Cook until the juices have dissipated, approximately 5 minutes.

    Remove from the heat and set aside to cool completely.

    Meanwhile, place the heavy cream and remaining sugar into a bowl and beat until soft peaks are just reached.

    Add the Greek yogurt to the whipped cream and fold to combine.

    Spoon or pipe enough of the creamy mixture to cover the base of your popsicle molds. Tap to remove any air bubbles.

    Top with a teaspoon of softened cherries and repeat the layering until your molds are full and you have tapped the molds to remove any air bubbles.

    Press your popsicle sticks into the center of your molds carefully.

    Place into your freezer for a minimum of 4 hours.

    Remove and allow to sit at room temperature for 10 minutes or until the popsicles slide out of the molds easily.

    Serve up and dig in immediately!
