Raw Fig Bars

Description

Raw dried fig bars are not often found and these are topped with dark chocolate drizzle and a pinch of salt which make them hard to resist.


Ingredients

450 grams / 3 cups dried figs, ends removed and sliced into quarters
30 grams / 2 tablespoons boiling water
50 grams / 1/2 cup walnuts, raw
43 grams / 1/3 cup brazil nuts, raw
15 grams / 1 tablespoon chia seeds
9 grams / 1 tablespoon linseeds
30 grams / 1 ounce dark chocolate
1/2 teaspoon coconut oil
1/4 teaspoon course sea salt


Instructions

  1. Line a loaf tin with greasproof paper and set aside.
  2. Place the quartered figs into a heatproof bowl and place into a double boiler on low heat.
  3. Pour in the boiling water and cover, heating until the figs are warmed through, approximately 5 minutes.
  4. Meanwhile, place the nuts and seeds into a blender and pulse until roughly chopped.
  5. Toss into a medium bowl and set aside.
  6. Place the warmed figs in a food processor or blender and pulse on and off until roughly chopped and sticky (your food processor or blender may become rather warm and you will have to clear out the blades every 30 seconds to a minute of pulsing, so give it time to cool down if necessary).
  7. Add the figs to the bowl with the nuts and seeds and stir until well combined and it holds together.
  8. Spoon the mixture into your prepared tin and press down firmly and evenly.
  9. Refrigerate for minimum 1 hour.
  10. Melt the chocolate and coconut oil, stirring until smooth.
  11. Remove the chilled bars from the fridge, slice and drizzle the chocolate over the bars.
  12. Sprinkle the course sea salt on top.
  13. Dig in!
