    Raw Fig Bars

    This Raw Fig Bars recipe includes soft dried figs blended with some nuts and seeds finished of with a layer of chocolate for a filling snack that will satisfy those sweet cravings whilst still being healthy.

    So these bars are an ode to him, but also to snacking on filling, healthy things that contain no gluten or dairy or animal products and need to no cooking. Thanks for raising me with a love of dried figs and a handful of raw, unadulterated nuts dad.

    How to prepare Raw Fig Bars

    • Soften those figs: Place in a double boiler to allow the heat to soften.
    • Blend your nuts and seeds: Blend until they are roughly chopped and set aside.
    • Blend the softened figs: Pulse until the figs are chopped as finely as possible.
    • Combine the chopped ingredients: Place the chopped figs and nuts into a bowl and stir together.
    • Press into your tin: Press the raw fig bars into a lined loaf tin and refrigerate.
    • Melt your chocolate: Remove the bars from the fridge and drizzle the chocolate over the top.
    • Top with sea salt: Finish the chocolate with the pinch of sea salt.
    • Slice: and serve. Enjoy!

    How to make Raw Fig Bars:

    Line a loaf tin with greasproof paper and set aside.

    Place the quartered figs into a heatproof bowl and place into a double boiler on low heat.

    Pour in the boiling water and cover, heating until the figs are warmed through, approximately 5 minutes.

    Meanwhile, place the nuts and seeds into a blender and pulse until roughly chopped.

    Toss into a medium bowl and set aside.

    Place the warmed figs in a food processor or blender and pulse on and off until roughly chopped and sticky (your food processor or blender may become rather warm and you will have to clear out the blades every 30 seconds to a minute of pulsing, so give it time to cool down if necessary).

    Add the figs to the bowl with the nuts and seeds and stir until well combined and it holds together.

    Spoon the mixture into your prepared tin and press down firmly and evenly.

    Refrigerate for minimum 1 hour.

    Melt the chocolate and coconut oil, stirring until smooth.

    Remove the chilled bars from the fridge, slice and drizzle the chocolate over the bars.

    Tips for the best Raw Fig Bars

    Soften firm dried figs: If you have quite firm dried figs you might want to add 1 or 2 tablespoons of boiling water to the figs when warming them in the double boiler, this will not only help loosen them before you blend them, but also help make it easier to blend them more finely.

    Lumps of dried figs: Don't stress too much if there are pieces of dried figs that don't get blended, as you can see in the images, they add to the layers you'll end up with when you press them into your dish.

    Setting your melted chocolate: The drizzled chocolate will set swiftly with how cold the bars are so you'll want to separate these slightly if you want a drizzle of chocolate over the edges of each piece.

    Description

    Raw dried fig bars are not often found and these are topped with dark chocolate drizzle and a pinch of salt which make them hard to resist.


    Ingredients

    450 grams / 3 cups dried figs, ends removed and sliced into quarters
    30 grams / 2 tablespoons boiling water
    50 grams / ยฝ cup walnuts, raw
    43 grams / โ…“ cup brazil nuts, raw
    15 grams / 1 tablespoon chia seeds
    9 grams / 1 tablespoon linseeds
    30 grams / 1 ounce dark chocolate
    ยฝ teaspoon coconut oil
    ยผ teaspoon course sea salt


    Instructions
