Rum in a popsicle ain't a new thing, but Orange Passion Rum popsicles with a dash of passionfruit and orange juice is the kind of thing one can get behind on humid summer days where simply opening the freezer is enough to get you sweaty.
There's something to be said about entering a restaurant, on your own when there isn't another soul dining there. This was a lesson I learned in Brooklyn when I had a hankering for nachos and a google search led me to Taco Chulo, a place with an owner and bartender so easy to talk to that I easily spent an hour enjoying one of the best plates of nachos in my life and a wonderful cocktail in the early afternoon.
Hanging out in a restaurant drinking cocktails and eating probably the best nachos of my life was also a bonus in getting out of the heat and not just eating an endless amount of popsicles to stay sane in a hot New York summer. Popsicles are easy to buy, but they are also super easy to make and these Orange Passion Rum Popsicles are literally three ingredients making the the kind you could throw together and put into the popsicle molds and return home to at the end of the day as a treat for even leaving the house.
This experience really taught me that sometimes we can be put off somewhere because of a lack of people and I'm like most in that I won't step foot somewhere if there isn't another soul. On that day though, I was starving and my want for nachos outweighed the idea of going into a restaurant without other patrons and it paid off.
Soon enough a New York summer will be a thing of my past with a return to New Zealand shores imminent so whilst I have both loved and dreaded the heat of the Big Apple in July and August, I'll think back fondly for who knows when I'll be back again for more Taco Chulo and all the other things this wonderful city has to enjoy!
Sometimes sticking to ones intentions is the best option, regardless of what others think and that can be a great thing. Likewise, these orange juice, speckled popsicles have two shots of rum, which if you so choose could be double because rum freezes well. How to prepare Orange Passion Rum Popsicles
- Swirl and stir: Mix all ingredients into a pouring bowl.
- Pour: Pour into the popsicle molds and freeze.
- Popsicle sticks: Push popsicle sticks into the partially frozen popsicles.
- Freeze: Return to the freezer.
- Serve: Remove and allow to sit on your bench until the popsicles wiggle free.
