- 1 kilo / 2 pounds 3 medium sweet potatoes, peeled and cubed
- 1 shallot peeled
- 2 large roasted peppers
- 6 sun-dried tomatoes
- 1 handful parsley
- 1 handful mint
- 40 grams / 1.4 ounces feta cubed
Dressing
- 1 tablespoon white vinegar
- 1 teaspoon wholegrain mustard
Instructions
- Preheat your oven to 180C/350F.
- Toss the sweet potatoes into your roasting tray and sprinkle 1 teaspoon sea salt on top and place in the oven to bake for 50 minutes.

- Finely slice the peppers and sun-dried tomatoes.
- And finely chop the mint and parsley and set all aside.
