This Lime and Cherry Refresher recipe is an ode to one of my favorite things to drink when it's so hot you just need an iced refresher. This is similar to a Lime Refresher but we're adding fresh cherries for sweetness and this uses fresh ingredients for a quick drink that is ideal when it's hot out.

New York is a city like no other and there's something about how the heat never leaves in the summertime, even at midnight it's hot and iced anything is needed to get through and yet in some masochistic way it's comforting that even in the depths of night it's warm and you're really getting what you hoped for through the long cold months of winter.
This year means there are currently no trips to the Big Apple in sight and so this Lime and Cherry Refresher was the best I could whip up in my home to capture a little of what I miss about those summers spent there previously. We also don't live around the corner from a Starbucks so making one of these was the best option available.
Ingredients and substitutions for Lime and Cherry Refresher
- Cherries: Fresh or frozen cherries would work here, though you might need to add a little water to frozen cherries when blending.
- Lime juice: The very core of this recipe is the fresh lime juice which adds a bright and zesty flavor, it is not recommended to replace with the bottled stuff here. Unless you can purchase same day pressed juice. Any medium lime such as Bearss, Persian or Tahiti limes work great.
- Sugar: The best sugar here is superfine or caster which dissolves into the lime juice quickly and adds only sweetness without additional flavors. You could replace with raw or white sugar, though the granules are larger so you might have to wait for them to dissolve longer than with superfine.

How to make Lime and Cherry Refresher:
Mix lime juice and sugar: Swirl until the sugar has dissolved.

Blend the cherries: The juice cherries are best here fully blended.

Combine: Combine the cherry juice and lime syrup together.
Add ice: Add enough ice and shake to cool the syrup and juice together.
More ice: Place ice into your serving glasses and pour over the refresher with some sliced limes in the glass.
Drink: Serve immediately, whilst well cold.

Lime and Cherry Refresher
Ingredients
- 3 limes
- 70 grams / ⅓ cup superfine/caster sugar
- 90 grams / ⅔ cup cherries pitted
- 750 milliliters / 3 cups water
- 2 cups ice + ice to serve
Instructions
- Juice 2 of the limes and pour the juice into a large jar that has a lid, add the sugar and swirl to dissolve. Set aside.
- Place the cherries and 1 cup water in a blender and blend until smooth.
- Add the cherries and remaining water into the lime juice and stir to combine.
- Add the ice, screw the lid on tightly and shake until you can feel it get icy.
- Slice the remaining lime and add to your serving glasses along with more ice.
- Serve immediately.
