Ingredients and substitutions for Peanut Butter Jam Bars
- Peanut butter: Plain smooth peanut butter was used here, no added sugar or salt because that is the best! You can substitute with plain crunchy peanut butter if you prefer or use whatever you have on hand.
- Rolled oats: Plain uncooked rolled oats are used here though you could substitute half almond flour or almond meal and plain or gluten free flour if you want to make this completely gluten free.
- Peanuts: Dry roasted were used here, though this adds a more savory flavor so you can definitely substitute with raw peanuts.
- Jam: Raspberry jam is my favorite which is why it was used here, but to be honest, any jam you prefer such as blackcurrant, strawberry, or blackberry would work well in these bars in equal measure.

Mixing bowl: You’ll need a mixing bowl to make the batter, which thankfully is a one bowl wonder.
Baking tin: A 18x18 cm or 7x7 inch square baking tin works well here to ensure your bars aren’t too thin with the amount of batter in the recipe.

How to make Peanut Butter Jam Bars:
Preheat oven to 180C/350 and line a baking tin with greaseproof paper.
Place the bananas into your bowl and mash until fine.
Add in the 135 grams / 1 ½ cups rolled oats, peanut butter and roasted peanuts to your bowl and stir until fully combined and no dry portions remain in your bowl.
Spoon ⅔’s of the batter into your tin and spread out evenly.
Place in the oven to bake for 10 minutes.
Remove and spread over the raspberry jam evenly.
Add the remaining rolled oats to the batter and stir to combine until it resembles a rough crumb mixture.
Take spoonfuls of the dough and drop on top of the jam, leaving gaps here for the jam filling to peek through.
Bake for 20 minutes or until lightly golden.
Allow to cool fully before removing and slicing evenly.

120 grams / ½ cup peanut butter
150 grams / ½ cup roasted peanuts
100 grams / ⅓ cup raspberry jam
