These bars are effectively banana bread bars with peanut butter and jam therein and one of my taste testers said they are the ‘best thing I’ve made yet’. Big words and I’ll let you decide for yourself!

Vegan and minimal ingredients

These require only a few ingredients and come together super quick and can even be made gluten free.

No added sugar

Thanks to the sweetness of bananas and the jam, we add no additional sugar meaning these are great for lunch boxes or a snack alike!

That layer of jam

To make these feel like a peanut butter jam sandwich, raspberry jam is great to cut through the peanut butter and banana flavors.

Ingredients and substitutions for Peanut Butter Jam Bars

  • Peanut butter: Plain smooth peanut butter was used here, no added sugar or salt because that is the best! You can substitute with plain crunchy peanut butter if you prefer or use whatever you have on hand.
  • Rolled oats: Plain uncooked rolled oats are used here though you could substitute half almond flour or almond meal and plain or gluten free flour if you want to make this completely gluten free.
  • Peanuts: Dry roasted were used here, though this adds a more savory flavor so you can definitely substitute with raw peanuts.
  • Jam: Raspberry jam is my favorite which is why it was used here, but to be honest, any jam you prefer such as blackcurrant, strawberry, or blackberry would work well in these bars in equal measure.

Equipment needed to make this

Mixing bowl: You’ll need a mixing bowl to make the batter, which thankfully is a one bowl wonder.

Baking tin: A 18×18 cm or 7×7 inch square baking tin works well here to ensure your bars aren’t too thin with the amount of batter in the recipe.

Offset spatula: A small offset spatula will help you smooth out the base and that jam center.

How long will these last?

Kept covered at room temperature, these bars will last up to 4 days – any longer and you might want to pop them into your fridge.

Can these be made gluten free?

Definitely! The best substitute half almond flour or almond meal and gluten free flour.

Serves 10

Ingredients:
340 grams / 3 medium bananas, peeled
135 grams / 1 1/2 cups rolled oats + 30 grams / 1/3 cup for topping
120 grams / 1/2 cup peanut butter
150 grams / 1/2 cup roasted peanuts
100 grams / 1/3 cup raspberry jam

Directions:
Preheat oven to 180C/350 and line a baking tin with greaseproof paper.

Place the bananas into your bowl and mash until fine.

Place in the oven to bake for 10 minutes.

Remove and spread over the raspberry jam evenly.

Take spoonfuls of the dough and drop on top of the jam, leaving gaps here for the jam filling to peek through.

Allow to cool fully before removing and slicing evenly.
